How to make a Chickpea Salad
The best part of this recipe is that you just have to put a couple of things in a big bowl and you are all set. Place the chopped cucumber, drained chickpeas and tomatoes in a large serving bowl.
Making the dressing
In a small bowl combine olive oil, lemon juice, chopped garlic, chopped shallot, and Italian seasoning, and mix vigorously. Pour dressing over the salad and toss to coat.
Finish and serve
Add feta cheese and salt and pepper to taste.Serve immediately or chill for a few hours before serving to meld flavors.
Cucumber Chickpea Salad
Ingredients
- 1 large cucumber spiralized, chopped or thinly sliced
- 1 (15 ouncchickpeas drained and rinsed
- 1 cup cherry tomatoes quartered
- 1/4 cup olive oil
- 3 teaspoons lemon juice
- 1/2 clove of garlic minced
- 1 teaspoon shallot minced
- 2 teaspoon Italian seasoning
- 1/2 cup crumbled Feta cheese
- salt and pepper to taste
Instructions
