Cucumber Chickpea Salad

- 1 large cucumber spiralized, chopped or thinly sliced
- 1 (15 ouncchickpeas drained and rinsed
- 1 cup cherry tomatoes quartered
- 1/4 cup olive oil
- 3 teaspoons lemon juice
- 1/2 clove of garlic minced
- 1 teaspoon shallot minced
- 2 teaspoon Italian seasoning
- 1/2 cup crumbled Feta cheese
- salt and pepper to taste
Place the chopped cucumber, drained chickpeas and tomatoes in a large serving bowl.
In a small bowl combine olive oil, lemon juice, chopped garlic, chopped shallot, and Italian seasoning, and mix vigorously.
Pour dressing over the salad and toss to coat.
Add feta cheese and salt and pepper to taste.
Serve immediately or chill for a few hours before serving to meld flavors
