1. Make couscous

Bring ½ cup water and ¼ teaspoon salt to a boil in a small saucepan. Add couscous and remove from heat; let stand, covered, until water is absorbed and couscous is tender, about 5 minutes.

2. Prep aromatics
Zest and juice half of the lemon. Cut the other half into wedges. Trim, peel, and finely chop 2 tablespoons of shallot. Pick 1 teaspoon leaves from thyme sprigs and finely chop (reserve rest for your own use).
3. Prep vegetables
Trim stem ends from broccoli rabe and discard. Cut stalks crosswise into 1-inch pieces. Place broccoli rabe and peas in a large skillet with 2 cups water. Season with salt and bring to a simmer. Cook until broccoli rabe is crisp-tender, about 3 minutes. Drain well.
4. Cook fish

Preheat broiler with rack 6 inches from heat. Lightly oil a rimmed baking sheet. Place pollock on sheet and season with salt and pepper. In a small bowl, combine mayonnaise, shallot, thyme, 2 teaspoons lemon juice, ½ teaspoon anchovy paste, and ½ teaspoon zest; spread evenly over fish. Broil until fish is just cooked through, 5–6 minutes (watch closely).

5. Sauté vegetables

Meanwhile, smash garlic. Heat 2 tablespoons oil and garlic in the skillet over medium-high, swirling, until garlic is golden, about 2 minutes. Add remaining anchovy paste and sauté for a few seconds, then add broccoli rabe and peas; season with salt and pepper. Sauté, stirring, until well-coated with garlic oil, about 2 minutes.

6. Finish couscous

Fluff couscous with a fork then stir into broccoli rabe and peas. Serve with fish and lemon wedges alongside. Enjoy!
