For the Meatballs:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1 egg
  • 1 clove garlic, minced
  • Salt and pepper, to taste

For the Soup:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup uncooked orzo pasta
  • 1 bunch spinach, chopped
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • Freshly grated Parmesan cheese, for serving

Step 1: Make the Meatballs In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, basil, egg, garlic, salt, and pepper. Mix well with your hands until everything is combined. Then, shape the mixture into small meatballs, about 1-inch in diameter.
